The majority of California wines, especially quality wines, are varietal wines: in other words they are named after the grape variety from which they are made. They may not be 100% from the variety named on the label, but that grape alone must form at least 75% of the contents. California winemakers have realized that a pure varietal does not necessarily mean the vest wine, but a careful blend often improves the wine.
These wines allow more room for blending in the Bordeaux style, if the winemaker uses the Bordeaux varieties such as; Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec for red wines; Sauvignon Blanc, Semillon and Muscadelle for Meritage whites. Some producers use the name Meritage, while others have created their own brand names.
The names of highly regarded wine regions such as Napa and Sonoma will help distinguish a wine, but they may be used only if a high proportion of the grapes have been grown in the named region. California still uses European names, such as; Chablis, Burgundy, and Port and Sherry- to describe generic wines. Due to the way the wines are made, most California wines can usually be opened young: a year or two after the vintage for white wines, three to five for standard red wines. The better white wines (such as: Chardonnays and Sauvignon Blanc’s from Napa and Sonoma), will improve with seven or either years, bottle-age.
