Shrimp and Vegetable Salad |

1 ½ Pounds unpeeled medium-size Fresh shrimp 2/3 Cup water ½ Cup chopped onion 1/3 cup dry white wine ¼ Teaspoon dried crushed red Pepper 1 Small sweet red pepper 1 Small sweet yellow pepper 1 Small green pepper Olive oil-flavored vegetable Cooking spray 3 Carrots, scraped and cut into very thin strips 1 clove garlic, minced 1 Small zucchini, cut into very thin Strips 1 Small yellow squash, cut into Very thin strips
Trimmed ¾ Cup plain nonfat yogurt ¼ Cup reduced-calorie Mayonnaise 2 Tablespoon Chopped fresh Dillweed 1 Tablespoon lemon juice ¼ Teaspoon salt ¼ Teaspoon freshly ground black Pepper
Dash of ground red pepper 7 ½ Cups shredded romaine lettuce
Peel and devein shrimp. Combine water and next 3 ingredients in a nonstick skillet; bring to a boil. Boil for 5 minutes. Add shrimp; cook 3 minutes. Remove shrimp, reserving liquid in skillet. Rinse shrimp with cold water; drain. Boil reserved liquid 3minutes or until reduced by half. Set aside 2 tablespoons liquid; discard remaining liquid. Seed and cut peppers into very thin strips; set aside. Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add carrot and garlic; sauté 2 minutes. Add pepper strips, zucchini, squash, and snow peas; sauté 4 minutes or until crisp-tender. Remove from skillet. Combine 2 tablespoons reserved liquid, yogurt, and next 6 ingredients; stir well. Arrange lettuce on a serving plate; top with vegetable mixture and shrimp. Serve with yogurt mixture Serves: 6
