Prep Time: 15 Minutes
¼ Cup firmly packed dark
brown sugar
1 ½ teaspoons cornstarch
½ Cup evaporated
skimmed milk
2 Tablespoons chopped
Pecans, toasted
1 Tablespoon praline
Liqueur or dark rum
2 Teaspoons reduced-
Calorie margarine
1 Teaspoon vanilla extract
2 Medium-size firm ripe bananas
3 Cups vanilla low-fat frozen yogurt
Combine brown sugar ad cornstarch in a medium saucepan.
Gradually stir in milk.
Cook over medium hear, stirring constantly, until mixture comes to a boil and thickens slightly.
Remove from heat.
Add pecans, liqueur, margarine, and vanilla, stirring until margarine melts.
Cut each banana in half crosswise; cut each piece in half lengthwise.
Spoon ½ cup frozen yogurt into each of 4 dessert dishes.
Top each serving with 2 slices banana; spoon 3 tablespoons praline sauce over bananas.
