4 Ounces ditalini macaroni,
Uncooked
½ Cup diced sweet red pepper
½ Cup diced sweet yellow pepper
1 Cup peeled, seeded, and
chopped tomato
¼ Cup diced purple onion
1 Tablespoon plus 1 ½ teaspoons
Minced fresh cilantro
1 Clove garlic, minced
1 Small Jalapeno pepper, seeded
And minced
1 ½ Teaspoons olive oil
1 ½ Teaspoons red wine vinegar
¼ Cup crumbled feta cheese
2 Tablespoons pine nuts, toasted
Cook macaroni according to package directions, omitting salt and fat.
Drain and set aside.
Combine sweet red pepper and next 8 ingredients in a large bowl.
Stir in macaroni.
Cover and chill at least 2 hours.
Top with cheese and pine nuts.
Serves: 4
