1 (2 ½ Pound) lean boneless sirloin
Roast
8 Cloves garlic, halved
¼ Teaspoon slat
1 Teaspoon coarsely ground
Pepper
Vegetable cooking spray
1 Cup unsweetened orange juice
½ Cup low-sugar orange
Marmalade
2 Tablespoons honey
1 Tablespoon low-sodium soy
Sauce
1 Teaspoon dried rosemary,
Crushed
Trim fat from roast. Make 16 slits halfway through roast; insert 1 garlic clove half in each slit.
Sprinkle roast with salt and pepper.
Coat a large skillet with cooking spray; place over medium-high heat until hot.
Add roast, and cook 5 to 6 minutes on each side or until browned on all sides.
Combine orange juice and remaining 4 ingredients.
Pour juice mixture over roast; bring to a boil.
Cover, reduce heat, and simmer 1 ½ hours or unitl roast is tender.
Remove roast from skillet; set aside, and keep warm.
Skim fat from pan juices.
Bring juices to a boil; cook over medium heat 20 minutes or until mixture is reduced by half, stirring occasionally.
Cut roast into thin slices; serve with juices.
