1 (15- Ounce) Can black-eyed peas, drained
½ Cup 1% low-fat cottage cheese
1 Teaspoon chili powder
½ Teaspoon ground red pepper
Vegetable cooking spray
½ Cup (2 ounce) shredded reduced
Fat Cheddar cheese
1 Tablespoon sliced green onions
Position knife blade in food processor bowl; add first 5 ingredients.
Process 1 minute or until smooth, stopping once to scrape down sides.
Transfer bean mixture to a 1-quart baking dish coated with cooking spray.
Bake 2 additional minutes or until cheese melts.
Top with green onions.
Serve with no-oil baked tortilla chips.
Yields: 1 1/2 cup
