¾ Cup wheat bran flakes cereal
1 ½ Cups nonfat buttermilk
¼ Cup fat-free egg substitute
2 Tablespoons Vegetable oil
2 Cups all-purpose flour
¼ Cup honey-flavored wheat germ
1 Teaspoon baking powder
1 Teaspoon baking soda
1 Teaspoon ground cinnamon
¼ Teaspoon salt
3 Tablespoons brown sugar
Vegetable cooking spray
Combine cereal and buttermilk in a small bowl; let stand 5 minutes.
Add egg substitute and oil; stir well.
Combine flour and next 6 ingredients in a large bowl, stirring well; make a well in center of mixture.
Add cereal mixture to dry ingredients. Stir just until dry ingredients are moistened.
Spoon batter into an 8 ½ - x 4 ½ - x 3-inch loaf pan coated with cooking spray.
Bake at 350 for 45 minutes or until a wooden pick inserted in center comes out clean.
Cool in pan 10 minutes; remove from pan, and let cool on wire rack.
Yield: (½ - inch) slices.
