1 Cup canned no-salt-added
Chicken broth
¾ Cup unsweetened orange juice
1 Teaspoon minced crystallized
Ginger
¼ Teaspoon ground cinnamon
¼ Teaspoon salt
1/8 Teaspoon ground red pepper
1 Cup plus 2 Tablespoons
Couscous, uncooked
½ Cup raisins
Orange rind strips (optional)
Combine first 6 ingredients in a medium saucepan; bring to a boil.
Remove fro heat, and stir in couscous and raisins.
Cover and let stand 5 minutes or until liquid is absorbed and couscous is tender.
Fluff couscous with a fork before serving Garnish with orange rind, if desired.
Serve immediately.
