1 (15.8) can Great Northern
Beans, rinsed and drained
1 (15 ounce) can black beans,
Rinsed and drained
1 ¼ Cups peeled, seeded, and
Chopped tomato
¾ Cup diced sweet red pepper
¾ Cup diced Sweet yellow pepper
¾ Cup thinly sliced green onions
½ Cup salsa
¼ Cup red wine vinegar
2 Tablespoons chopped fresh
Cilantro
¼ Teaspoon salt
1/8 Teaspoon freshly ground pepper
10 cups finely shredded romaine
Lettuce ( about 1 head)
Combine beans and chopped tomato in a large bowl, stirring gently.
Add red pepper, yellow pepper, and green onions; stir to combine. Set aside.
Combine salsa and next 4 ingredients; stir with a wire whisk until well blended.
Pour over bean mixture, and toss gently.
Line a large serving bowl with shredded lettuce; top with bean mixture
Serves: 10
