1 ½ Cups low-fat vanilla ice
Cream, softened
½ Teaspoon ground cinnamon
6 Small Rome apples
¼ Cup plus 2 tablespoons firmly
Packed brown sugar
¼ Cup reduced-calorie margarine
2 Tablespoons raisins
Ground Cinnamon(optional)
Combine softened ice cream and ½ teaspoon cinnamon; spoon mixture into a 9-inch square pan.
Cover and freeze 2 hours or until firm.
Core apples, cutting to, but not through, the bottom of each apple.
Spoon 1 tablespoon brown sugar, 2 teaspoons margarine, and 1 teaspoon raisins into center of each apple. Place apples in an 11- x 7 – x 1 ½ -inch baking dish; cover with heavy duty plastic wrap.
Microwave at HIGH for 10 minutes or until apples are tender, giving dish a half turn after 5 minutes.
Place apples in individual serving dishes; drizzle cooking liquid in baking dish evenly over apples.
Top each apple with ¼ cup ice cream mixture.
Sprinkle with cinnamon, if desired
