1 Cup 1% low-fat cottage cheese
½ Cup grated Parmesan cheese
3 Tablespoons nonfat mayonnaise
1 To 2 cloves garlic, minced
¼ Teaspoons hot sauce
1 (14-ounce) can artichoke hearts,
drained and finely chopped
Vegetable cooking spray
48 Whole wheat Melba rounds
Combine Neufchatel cheese and yogurt in a large mixing bowl;
bear at medium speed of an electric mixer until smooth.
Add Cheddar cheese and next 4 ingredients; stir well.
Cover and chill at least 1 hour.
Shape cheese mixture into a ball, and sprinkle with parsley gently into cheese ball.
Wrap cheese ball in heavy-duty plastic wrap, and chill.
Serve with Melba round (or your favorite) crackers.
